In Trentino about 300 alpine dairies produce mountain milk that is either processed directly at the place of origin or delivered to dairies in the valley.
This practice is rooted in local tradition,where butter and alpine cheese are prodeced using only raw milk, that is, without any heat treatment.
This choice preserves and enhances the characteristics of the land.
Raw milk transfers to the cheese the aromas and the scents of the grasses and flowers of the alpine pastures, safeguards the work of the shepherds and the skill of the cheesemakers, who with ancient gestures, transform the milk into unique forms.
An authentic expression
The production of alpine cheese and butter is not only an economic activity, but an authentic expression of local identify and culture, passed down from generation to generation.
Highly inadvisable for children under 10 years of age.
Raw milk products are not suitable for people with a developing or compromised immune sistem.
Therefore, it is not recommended for frail persons, pregnant women, the elderly and highly inadvisable for children under the age of 10.
